This week’s stops

Same truck, different curb. Most weeks look like this — lunch near the offices, dinner at the breweries, Saturday at the market.

The short menu.

Five tacos, a couple of plates, and corn off the grill. It fits on the side of the truck, and every line of it gets made to order.

Corn tortillas pressed on the truck. Every taco can be made vegetarian — just ask at the window.

Marinated pork and corn tortillas sizzling on a flat-top griddle, steam rising in the sunlight

One truck. One griddle. No shortcuts.

It started with a used bread truck and a tortilla press from our aunt’s kitchen. The pork still marinates overnight, the salsas still get made every morning, and the menu still fits on one side of the truck.

If you have questions about what’s in anything, ask at the window. Whoever is on the flat-top will tell you.
